Aurum Sabinae 'Monovarietale Carboncella' is a monocultivar extra virgin olive oil, cold-pressed solely from 100% Italian Carboncella olives. This cultivar is increasingly rare due to both the slow growth of this specific variety of trees and the difficulty of their harvesting, which is done with very little use of machinery.
For these reasons, our production is limited to 500 bottles per year, which are individually numbered. Despite the enormous disadvantages this cultivar presents in terms of production costs, the resulting oil is of superlative quality to the point that it is listed by many international experts amongst the best extra virgin olive oils in the world.

Extra virgin olive oil cold-pressed from 100% Carboncella olives grown, harvested and packed in Sabina (Italy).
TASTING NOTES
The ancient Sabine growers used to call the oil pressed from Carboncella olives the ‘Summer Oil’, for its ability to retain up till June the flavour of freshly crushed fruit. And you will not find it hard to get why: the scent of fresh fruit is immediately noticed, as well as clear notes of freshly cut grass and floral tones. The taste is robust yet impressively wide in the spectrum, with an opening of artichoke, cardoon and sweet floral notes followed by an incisive spicy progression, where hints of white pepper emerge in a classy finale of bitter almond notes.
