Aurum Sabinae (Latin for ‘Gold of Sabina’) is our homage to the Sabina region's most unique and internationally appreciated cultivars. The olive varieties harvested to produce these limited selections are the most precious and rare cultivars of Lazio, where they have been grown for more than 2,000 years.
The 'Monovarietale Carboncella' Small Batch Release is a monocultivar extra virgin olive oil, cold-pressed solely from 100% Italian Carboncella olives, a cultivar that is increasingly rare due to both the slow growth of this specific variety of trees and the difficulty of their harvesting, which is done with very little use of machinery.
For these reasons, our production islimited to 500 bottles per year,which are individually numbered. Despite the enormous disadvantages this cultivar presents in terms of production costs, the resulting oil is of superlative quality to the point that it is listed by many international experts amongst the best extra virgin olive oils in the world.
